The Molotov Kitschen plus Cocktails is a new addition to the restaurant scene in Denver, Colorado, and it is surprising visitors by serving traditional Ukrainian food and drinks with a twist.

“The Molotov is my favorite – it’s a flaming cocktail with vodka, oat milk, cinnamon, flaming cube with some overproof rum on it… These are two of my favorites, I don’t think there’s anything like this in Denver!”

Lindsey Marr is the manager at the restaurant, which opened in January.

“My favorite dish here would have to be the braised duck and the sour cherry borscht. It has been very educational for me, too. I’ve learned a lot about the culture and the cuisine. So that's been really cool."

The owner of the restaurant is Bohdan Porytko. His grandparents immigrated to the U.S. decades ago, and Porytko grew up in New Jersey. He came to Colorado only a few years ago.

Molotov is Porytko’s third restaurant in Denver, but the first one where he uses his family recipes.

“After having a couple of other restaurants, you get a little nostalgic, you want to start making your Baba's food again. My Baba is the one who taught me how to cook in the first place, so for me, it is very important to show off my legacy, my heritage, my culture. Also, it is just what I grew up eating, so I miss it."

For local Travis Moore, this was his first experience at a Ukrainian restaurant.

“I got borscht on the menu, which I have heard and am now eating for the first time. I don’t know if duck is normally the thing, but duck is hard to get right, and this duck is great.”

The restaurant attracts lots of American Ukrainians as well.

Porytko says his mission is to educate as many people in the U.S. about his native land as he can. And he chose a path that is both immersive and extremely tasty – through food and culture.
